Yamate cacao beans have been properly grown, harvested, fermented, dried, blended, roasted, winnowed, refined, conched and tempered, to create their own unique intense chocolate taste. The sweetener used in our confections is Maltitol ¿ a non sugar sweetener that comes from corn. It is about 90% as sweet as sugar and is non-cariogenic. Maltitol is mostly not digested and therefore, like fiber, the Maltitol carbohydrates listed on the nutritional panel should be deducted from the Total Carbohydrates to arrive at the net digested carbohydrates. This results in 2g of carbohydrates per 42g serving in the Dark Bar. This product is therefore particularly useful for those looking for a low carbohydrate confection. Reader Reviews My father is diabetic, and a bit non-compliant. As I have tasted most of his chocolate choices, I can see why. This however, is by far the best chocolate for diabetics I have run across yet. After trying it, I was surprised by the lack of bitterness I am used to in dark chocolate ( which I don't usually eat for that reason) AND no noticeable aftertaste! I think i ended up sneaking a few more squares before he noticed... telling him it was for " testing purposes". I definitely will be buying more! |
