Osetra Royal Caviar - Malossol For those who get lost in a sea of swimming sturgeon, Osetra caviars in all their designations can be as hard to understand as swimming against the current. <b>Caviar Tip:</b> "Royal" in caviar-speak, means its undergone semi-pasteurization. Wild Osetra (Acipenser gueldenstaedtii) roe is harvested in the Caspian and Black Seas, and then undergoes semi-pasteurization, giving it a longer refrigerator life.
