So much so, in fact, that overcooking Wagyu is unthinkable. It's so tender and buttery that it demands to be cooked rare or, at most, medium-rare. Overcooking eliminates all the delicious fat that makes this meat so succulent. In addition, I find that Wagyu is best served with very plain sides.
