The firm and supple texture of this cheese makes it easy to cut, shave, or spread (great meltability). When aged, it becomes harder in texture, while the flavor takes on a more robust character. It has a bit of a bite, melts great and adds bunches of flavor in any application. I have sliced it and melted it on grilled chicken sandwiches, have shredded it and blended it with mozzarella and provolone for pizza, and used it in omelets - all with great results. This is a great tasting cheese - not very well known - which once you try you will be a fan of forever! |
